Bruschetta Chicken

This bruschetta chicken recipe is a easy to prepare healthy low-carb dish bursting with flavors of balsamic vinegar and a fresh tomato mixture.  It's an easy recipe perfect for a busy weeknight!

Bruschetta Most people think of bruschetta as a topping for bread, crackers, or chips.  But adding it on top of tender chicken (that has been marinated in balsamic vinegar) creates a wonderful unique flavor and taste.

Ingredients
  • 4 chicken breasts (about 6 ounces each)
  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic (minced)
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 3/4 cup shredded mozzarella
  • For the bruschetta
  • 1 1/2 cup cherry tomatoes, halved
  • 3 cloves garlic (minced)
  • 1/2 small red onion (chopped)
  • 1 1/2 tsp balsamic vinegar
  • 1 tsp olive oil
  • 1/2 cup chopped basil
  • 1/2 tsp salt
Instructions
  1. Add the chicken breast to a baking dish. Add the oil, balsamic vinegar, garlic, Italian seasoning, and salt to a small bowl and whisk to combine. Pour over the chicken and turn to coat. Let chicken sit for 10 minutes while oven heats to 425° Place chicken in the oven and bake for 25-30 minutes.
  2. While the chicken is baking, add all of the ingredients for the bruschetta to a bowl and toss to combine. When the chicken is cooked through, remove from the oven and top with mozzarella.
  3. Pour the bruschetta over the chicken and return to oven for 5-7 minutes to melt the cheese and warm the tomatoes.
Recipe Notes

  • drizzling balsamic vinegar glaze over this dish adds even more flavor.
  • use fresh tomatoes and garlic
  • do not over cook the chicken
