Chicken Parmesan Meatballs

This chicken parmesan meatball is a great spin on the original chicken breast parmesan recipe.  These meatballs are so easy and delicious and ready in no time.  Ground chicken with lots of parmesan and a few herbs and spices turns these meatballs up a notch while creating a new obsession that is sure to impress!  Try them for dinner with pasta, garlic bread and a salad.

Ingredients
  • 1lb ground chicken
  • 1/2 cup grated parmesan
  • 1/3 cup italian breadcrumbs
  • 1 egg
  • 3/4 tsp salt
  • 3/4 tsp black ground pepper
  • 1/2 tsp oregano
  • 1/2 tsp red pepper flakes
  • 1/2 tsp parsley flakes
  • 1/4 cup flour
  • bocconcini mozzarella balls
  • 1/3 cup olive oil
  • 1 jar spaghetti sauce
  • italian parsely chopped (optional)
Instructions
  1. Combine chicken, parmesan, breadcrumbs, egg, salt, pepper, oregano, and parsley flakes in a large bowl. Combine everything with your hands until well mixed.
  2. Form the ground chicken mixture into small meatballs (about the size of a golf ball).
  3. Insert a mozzarella ball in the center of each meatball and reform the meatball around the cheese. (Make sure the mozzarella is hidden from sight).
  4. Lightly coat each meatball with flour and tap off any excess flour.
  5. Preheat the oven to 350°
  6. Heat the olive oil in a large heavy bottom skillet ( I use my cast iron skillet) on medium heat. When the oil is hot add the meatballs and saute' for about 4 minutes browning the outsides of each meatball.
  7. Remove browned meatballs from the skillet and place to the side. Add the spaghetti sauce to the skillet (season to liking) and place the meatballs on top of the sauce.
  8. Place the skillet of meatballs and sauce into the oven and bake for 15-20 minutes or until cooked through.
  9. Remove the skillet from the oven and add chopped italian parsley and extra mozzarella balls if desired.
Recipe Notes

  • This dish is great served with angel hair pasta, linguine, or spaghetti
  • You can use marinara sauce if you prefer
  • Omit the red pepper flakes if you don't want a hint of spice
