Lemon Garlic Shrimp Skewers

A flavorful lemon garlic shrimp skewer recipe easily prepared in under 30 minutes!  These skewers really come together very easily.  Simply threading the shrimp, baking, and brushing with a delicious butter mixture containing lemon, garlic, and herbs that is loaded with flavor.  Perfect for appetizers, or a light main dish served with a salad.

Ingredients
  • 1 1/2 lb medium shrimp (peeled and deveined)
  • 2 lemons (sliced and cut)
  • Himalayan salt and black pepper (to your liking)
  • 1/4 cup butter (melted)
  • 1/4 cup lemon juice (freshly squeezed)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1/2 tsp dried basil
  • 1 tbsp chopped fresh parsley (optional)
Instructions
  1. Preheat oven to 450° Lightly oil a baking sheet or coat with nonstick spray.
  2. Lightly season shrimp with the salt and pepper, then thread the shrimp and lemon slices onto skewers and place onto the prepared baking sheet.
  3. Place into oven and bake just until pink and cooked through (about 7-9 minutes)
  4. Melt butter in small pan over medium heat, stir in lemon juice, garlic, oregano, thyme, and basil until fragrant (about 2 minutes)
  5. Remove shrimp skewers from the oven when done and brush each shrimp with the melted butter mixture. Garnish with parsley if desired.
Recipe Notes

  • You can use Jumbo shrimp and bake a few additional minutes
  • These can be grilled over medium high heat about 3-4 min per side
