Quiche Pastry Cups

Want to try a recipe perfect for brunch?  This quiche pastry cups recipe is surely a crowd pleaser.  I used sausage in this recipe but you can easily customize using different meats and veggies.

Quiche

Is a pastry crust filled with egg and pieces of cheese, meat, seafood or vegetables.  It's considered a French dish; It can be served hot or cold.

Ingredients
  • 1 package frozen puff pastry (thawed)
  • 4 large eggs (divided)
  • 1 cup plus 2 tbsp half and half cream (divided)
  • 1 -1/2 cup shredded cheese (I used Gruyere)
  • 1-1/2 cup fresh spinach (chopped)
  • 1 small red bell pepper (chopped)
  • 1 lb package of sausage
Instructions
  1. Cook, crumble, and drain sausage, chop veggies and set aside. Preheat oven to 400°. Unfold puff pastry on a lightly floured surface, roll each sheet into a 12 in. square; cut out 12 squares. Place in ungreased muffin cups, gently press onto bottoms and sides, allowing the corners to point up.
  2. In a medium bowl, whisk 3 eggs, 1 cup of cream, and any seasonings that you want ( I use seasoning salt, garlic powder, and black pepper). In another bowl, combine cheese, spinach, red pepper, and sausage; divide among pastry cups. Pour egg mixture over cheese mixture (do not fill to top because mixture will rise and you don't want it to overflow).
  3. In a small bowl, whisk remaining egg with remaining cream and brush over pastry edges. Bake 15-18 minutes or until golden brown. Serve warm. This recipe should make 9-12 pastry cups.
Recipe Notes

  • You can use any veggies or meats that you like
  • Fill the egg mixture only half way to avoid an overflow
