Salmon Bites

Give these salmon bites a try.  This recipe is very simple with an outstanding delicious outcome.  Little flavorful bite sized pieces of salmon drizzled or dipped in a Cajun honey sauce, perfect for any gathering or quick meal.

Ingredients
  • 4 salmon filets (not thin)
  • 1 tsp olive oil
  • 1/2 tsp lemon pepper seasoning
  • 1/2 tsp Cajun seasoning
  • 1 cup flour
  • 1/2 cup cornstarch
  • 1/2 cup canola oil (maybe more)
  • Cajun Honey Garlic Sauce
  • 1/2 cup honey
  • 2 tsp soy sauce
  • 1/2 tbsp hot sauce (or less depending on your taste)
  • 1/2 tbsp brown sugar
  • 1/2 tbsp minced garlic
Instructions
  1. Clean each salmon filet and pat dry.
  2. Slice filets into cubes, place the cubes in a bowl, drizzle with the olive oil and season with the lemon pepper and Cajun seasoning (making sure all of the cubes have seasoning on them) and set aside.
  3. Heat the canola oil in a medium skillet for just a few minutes
  4. while oil is heating, mix the flour and cornstarch on a plate with a fork
  5. Dredge and cover each salmon cube in the flour mixture and add to skillet once oil is hot.
  6. Cook salmon cubes about 3-4 minutes per side depending on thickness.
  7. Once done place them on a plate with a paper towel (to drain any excess oil)
  8. Cajun Honey Garlic Sauce
  9. Mix all ingredients in a small glass bowl and place in microwave about 30 seconds or less (not more than that.
  10. Stir the sauce well, drizzle over the bites and enjoy.
Recipe Notes

  • use single salmon filets ( I buy a bag of frozen individually wrapped salmon filets and use four of them) but feel free to use fresh as well.
  • you can use more or less hot sauce depending your desire for spice
  • you can also use the sauce for dipping instead of drizzling over the bites
