Sausage and Peppers

What a delicious combo! Italian sausage, bell peppers, sweet onions, garlic and diced tomatoes.  This dish tastes great on it's own, but better with pasta or in a hoagie roll. Depending on your taste buds this dish can be made to be mild or spicy.  It's a easy, quick, and satisfying recipe all combined in one skillet, perfect for a week night after work.

Ingredients
  • 1 package Mild Italian Sausage
  • 2 tbsp vegetable oil
  • 1 green pepper (sliced thin)
  • 1 red pepper (sliced thin)
  • 1/2 large sweet onion (sliced thin)
  • 1 tbsp minced garlic
  • 2 tbsp tomato paste
  • 1 (14.5 ounce) can diced tomatoes
  • 1/2 cup water
  • 1/2 tsp salt
  • 1 tsp oregano
  • 1/2 tsp basil
  • 1/2 tsp black ground pepper
  • 1/2 tsp red pepper flakes
  • 1 tsp sugar (to break up bitterness)
Instructions
  1. Add vegetable oil to a large skillet and heat over medium heat. Add the sausages and cook until brown on both sides. Remove sausage from the skillet and set aside. (You will finish cooking the sausage through later)
  2. Add onion and peppers to leftover oil in the skillet and cook on medium heat until softened (about 4-5 minutes). Add the minced garlic and cook for 1 minute more.
  3. Slice sausage into 1 1/2 inch pieces and return to skillet along with all the remaining ingredients.
  4. Cook for 7-10 minutes, or until sausage is cooked through and sauce has thickened.
  5. Serve on pasta or hoagie rolls if desired
Recipe Notes

  • You can spice this up by using spicy Italian sausage or adding more red pepper flakes
  • Serve with pasta, rice, or on a hoagie roll.
