Seafood Salad

A quick, easy, and tasty seafood salad recipe that is surely a hit.  It's a light snack perfect for a hot sunny day especially when you do not want to turn on that stove!  Makes a great side or potluck dish as well.  Go ahead and give it a try!

Seafood Salad Is a combination of shrimp, crab meat, celery, red onion, and seasonings tossed  and combined with mayonnaise to make a light salad that is served cold and great with crackers.

Ingredients
  • (1) 16 oz package cooked shrimp (peeled and deveined )
  • (3) 8 oz packages of imitation crab
  • 1/2 cup chopped celery
  • 1/3 cup chopped red onion
  • 1/2 tbsp old bay seasoning
  • 1/2 tbsp dill weed seasoning
  • 1 tsp black ground pepper
  • 1 tsp paprika
  • 1 cup or more mayonnaise (I prefer Hellmann's )
Instructions
  1. Defrost package of shrimp, I usually set my frozen shrimp in a bowl of cold water for 20 minutes. While the shrimp is defrosting go ahead and chop the celery and red onion and set to the side.
  2. Open packages of imitation crab and add to a large bowl. Drain defrosted shrimp and remove tails. Pat the shrimp with paper towel to remove any remaining water and add to the bowl of crab meat.
  3. Add chopped celery and chopped onions to the bowl along with all the seasonings (old bay, dill weed, black pepper, and paprika). Add 1 cup of mayonnaise and mix all ingredients with a mixing spoon until well combined. You may need to add more mayo depending on your desired creaminess. (add a little at a time) Serve cold with crackers or eat plain.
