Easy Shrimp and Sausage Jambalaya

This is an easy jambalaya recipe with a ton of flavor and hint of spice.  Rice, shrimp, and sausage with creole seasoning sounds good, right? This easy jambalaya recipe can be made and on your plate in under an hour, making it perfect for an after work meal.  Nothing like quick, easy, and tasty on a work night!

  Jambalaya Is a Cajun dish consisting mainly of meat and vegetables mixed with rice.  Traditionally, the meat is always a sausage of some sort, along with chicken and seafood such as shrimp.  It is a Louisiana classic so there is some spice involved.  Jambalaya is similar to (but distinct from) Gumbo another rice and meat dish known in Louisiana cuisine.

Ingredients
  • 1 pack yellow rice (8 oz)
  • 2 tbsp olive oil
  • 1/2 small onion (chopped)
  • 1/2 green bell pepper (chopped)
  • 1 clove garlic (minced)
  • 1 pack turkey sausage (sliced)
  • 1 lb raw shrimp (large, peeled and deveined)
  • 1 small can of tomato sauce (6 oz)
  • 1 tbsp Cajun or creole seasoning
Instructions
  1. Cook yellow rice according to package and set aside for later use.
  2. In large skillet add 1 tablespoon of olive oil and cook sliced sausage for 4 minutes then add shrimp and cook an additional 2-3 minutes. Remove sausage and shrimp from skillet and place in plate or bowl until later use.
  3. Add 1 tablespoon of olive oil to the skillet then add chopped peppers and onions, saute 2-3 minutes then add garlic and saute an additional 3 minutes.
  4. Add cooked rice, tomato sauce, and cajun or creole seasoning to the skillet and stir until well combined. Cook for about 5 minutes then add the cooked sausage and shrimp and stir to combine all ingredients. Remove from heat and serve.

  • You can use a spicy sausage to increase spice level
