Shrimp Fajitas

 Shrimp fajitas made at home are simply the best, especially when you have a delicious fajita marinade to put them over the top.  Make this recipe once and you will make it again and again.  It's so simple and flavorful and they don't disappoint! Go ahead and give them a try.

Shrimp Fajitas A seafood version of an otherwise well known meat dish.  A fajita in Tex-Mex and Mexican cuisine is any grilled meat that is usually served with a flour or corn tortilla. The meat in fajitas usually mingles with grilled marinated peppers and onions, making them ready to eat once stuffed in the warmed tortilla!

Ingredients
    Fajita Marinade
  • 1/4 cup olive oil
  • 3 cloves minced garlic
  • 1 tbsp lime juice (from 1/2 lime)
  • 1 tbsp Cajun seasoning
  • 1/2 tsp salt
  • Shrimp Fajita
  • 1 lb large shrimp (peeled and deveined)
  • 2 bell peppers, any color (sliced)
  • 1/2 small onion (sliced)
  • 1/4 cup cilantro (chopped)
  • 2-3 tsp lime juice (from 1/2 lime)
  • To Serve
  • small flour tortillas (about 8)
  • 1 avocado (sliced)
  • taco ranch (or jalapeno ranch)
  • 1 lime (cut into wedges)
Instructions
  1. In a small bowl combine the marinade ingredients; oil, garlic, lime juice, Cajun seasoning, and salt. Slice the bell peppers and onions place the vegetables in a medium bowl. Pour half of the marinade over the top then toss to combine.
  2. Pat the shrimp dry with paper towel and place in a second bowl, add remaining half of the marinade and combine.
  3. Heat a large skillet with 1/2 tbsp olive oil. Once skillet is hot, add shrimp and saute 1-2 min per side then remove. Place shrimp on a plate until ready to use.
  4. In the same skillet, add marinated vegetables and saute about 7 minutes or until soft and then turn off heat. Add shrimp (and it juices) back to skillet and toss with cilantro and a squeeze of lime juice. Serve with warm tortillas, avocado, and taco ranch.
Recipe Notes

  • Taste good with avocado or guacamole
  • Jalapeno ranch can be used instead of taco ranch
  • Warm tortillas in microwave, skillet, or griddle 15-30 seconds
