This sausage tortellini soup features Italian sausage, veggies, and pasta cooked in one pot while creating a creamy and delicious broth. It is a nourishing comfort food full of flavor that is so easy to make and ready to serve in less than one hour. Once you make and taste it, I can guarantee you it will not be your last.

- Heat pot and add olive oil. Next add the sausage to the pot. Brown the sausage and break up into crumbles as it cooks. Drain excess grease from the pot.
- Add the diced onion, carrots, and celery, saute the veggies 3-4 minutes, next add the garlic and seasonings and saute an additional minute.
- Next, mix in the tomato paste and combine with meat and veggie mixture and then immediately add the chicken stock while stirring, then add diced tomatoes.
- Bring the soup to a boil and then reduce heat to a simmer for 10 minutes or until the veggies are tender.
- Add the chopped kale and tortellini to the pot. Cover and let the tortellini cook in the soup 5-7 minutes or according to the directions on the package.
- Pour in the heavy cream and lightly stir although mixing well.
- Optional: Mix 1/2 tablespoon of cornstarch, with 1/2 tablespoon of water in a cup and pour into soup if you want a thicker soup broth. The soup will also thicken as it simmers.
- top with shredded parmesan if you'd like and enjoy.
