This chicken parmesan meatball is a great spin on the original chicken breast parmesan recipe. These meatballs are so easy and delicious and ready in no time. Ground chicken with lots of parmesan and a few herbs and spices turns these meatballs up a notch while creating a new obsession that is sure to impress! Try them for dinner with pasta, garlic bread and a salad.

- Combine chicken, parmesan, breadcrumbs, egg, salt, pepper, oregano, and parsley flakes in a large bowl. Combine everything with your hands until well mixed.
- Form the ground chicken mixture into small meatballs (about the size of a golf ball).
- Insert a mozzarella ball in the center of each meatball and reform the meatball around the cheese. (Make sure the mozzarella is hidden from sight).
- Lightly coat each meatball with flour and tap off any excess flour.
- Preheat the oven to 350°
- Heat the olive oil in a large heavy bottom skillet ( I use my cast iron skillet) on medium heat. When the oil is hot add the meatballs and saute' for about 4 minutes browning the outsides of each meatball.
- Remove browned meatballs from the skillet and place to the side. Add the spaghetti sauce to the skillet (season to liking) and place the meatballs on top of the sauce.
- Place the skillet of meatballs and sauce into the oven and bake for 15-20 minutes or until cooked through.
- Remove the skillet from the oven and add chopped italian parsley and extra mozzarella balls if desired.
Notes
- This dish is great served with angel hair pasta, linguine, or spaghetti
- You can use marinara sauce if you prefer
- Omit the red pepper flakes if you don't want a hint of spice
