Instructions
- Combine all stir fry sauce ingredients in a jar or bowl. Whisk or shake (with a tight fitting lid on the jar) until fully combined. Set aside for later use.
- Rinse and slice bell peppers and onion then set aside, rinse mushroom and snow peas in a strainer. Rinse, cut, and lightly season the chicken and set aside.
- Place 1 tbsp of olive oil in wok or skillet, add the seasoned cut chicken and saute until chicken is cooked through (about 5-6) minutes. Remove from wok (or skillet) and set aside in a bowl or plate.
- Place remaining 1 tbsp of olive in wok or skillet, add bell peppers and onions, saute 2-3 minutes on medium-low. Add the mushrooms and snow peas and saute along with peppers and onions an additional 2 minutes.
- Add cooked chicken back in wok with the saute'd veggies and mix for 1 minute, then add prepared stir fry sauce. Mix all ingredients well on low heat for 1-2 minutes and remove from heat or until sauce has slightly thickened. Serve over rice or more veggies.
Notes
- You can use chicken breast instead of tenderloins
- You can also add more veggies if you like
- Add red crush pepper flakes or sriracha to stir fry sauce as a optional spicy sauce
