Cheesy Stuffed Chicken

This is an easy cheesy delicious chicken dinner.  The creamy cheese stuffing turns this chicken up a notch! Such an easy recipe that requires no hard labor with good and tasty results.  There’s always room to add another chicken recipe to the rotation, and once you make this it won’t be the last time.  Great for any day of the week!

  • Pre heat oven to 450°
  • Combine all of the cheese stuffing ingredients in a small bowl with a large spoon and set aside (make sure the cream cheese has softened at room temperature).
  • Prepare a baking sheet with foil and some of the canola oil
  • Carefully make a slit in each chicken breast creating a pocket
  • stuff each pocket with the cheese stuffing ( I stick a few toothpicks in the chicken to prevent some of the stuffing from falling out)
  • Lightly drizzle canola oil over the chicken and sprinkle with the seasoning salt (or salt), black pepper, garlic powder, and thyme.
  • Place chicken in the oven and bake between 25-35 minutes depending on how thick your chicken breast are. I prefer mine on the thin side and usually bake about 30 minutes.
  • Once the chicken comes out of the oven sprinkle with a little parsley if you want. You will notice some of the cheese stuffing has oozed out, and that's ok. The cheese sauce taste great on mashed potatoes and veggies and that's generally what I like to serve with this chicken.

Notes

  • Great with mashed potatoes and veggies
  • I recommend not using extremely thick chicken breast
