Taco Lasagna

Want to feed a crowd with an easy recipe?  This taco lasagna recipe is delicious, and sure to please! It’s like tacos, enchiladas, and tostadas all rolled in one giant dish.  It’s perfect for a crowd, game days, and potlucks.  It’s a great comfort food loaded with taco flavor and creamy cheese done in just 40 minutes.

What is taco lasagna?

A baked taco-style lasagna with layers of tortillas, taco seasoned ground turkey or beef, pico de gallo, and cheese. You can also add in other ingredients like corn, beans, and toppings.  It’s very filling and a fun twist of a traditional lasagna with little prep and easy to make.

  • Preheat oven to 400°. Brown meat and drain, add taco seasoning packets according to directions on packet. In a separate pot, make the cheese sauce by melting the butter over medium-low heat. Add the heavy cream to the melted butter and gently mix with a whisk. Mix in 2 cups of the shredded mexican cheese into the pot. Mix with whisk until the cheese is melted. Add 1 tablespoon of Cajun seasoning to the melted cheese mixture
  • Prepare baking dish with non-stick spray, cut tortillas in half. Line the baking dish with tortilla halves. (as pictured)
  • Add 1/3 of the taco meat over the tortillas, add 1/3 of the cheese sauce over taco meat, sprinkle pico de gallo over the cheese sauce. Repeat those steps two more times.
  • Sprinkle the remaining cup of shredded cheese on top and bake for 15-20 minutes.

Notes

  • You can add other ingredients to the lasagna, I added some corn and black beans (as pictured)
  • You can add toppings that you like, I added sour cream, tomatoes, and green onions
  • Using an aluminum baking dish makes clean up easier for this dish
