Jambalaya

Is a Cajun dish consisting mainly of meat and vegetables mixed with rice.  Traditionally, the meat is always a sausage of some sort, along with chicken and seafood such as shrimp.  It is a Louisiana classic so there is some spice involved.  Jambalaya is similar to (but distinct from) Gumbo another rice and meat dish known in Louisiana cuisine.
